Petr Koráb is constantly inventing, looking for new ways to bring a range of flavours and textures in his wines. Last year, he decided to make Carbonic For All, which is a blend of Riesling and Hibernal (a local, Czech variety). The wine goes through carbonic maceration a technique usually followed in red wines, but this brings a lovely texture and fresher flavours where usually Hibernal and Riesling can show too much of exotic fruit or a perfumed character, this wine is more mineral and has a lovely, precise finish.
