Pet Nat or Methode Ancestrale is the earliest variation of making sparkling wines. This wine is quickly becoming one of the cult wines from Petr Korab. With a long wait list. It is a blend of Gewürtztraminer, Welschriesling and Grüner Veltliner. From 30 year old vineyards that are uncut, as a result the berries are small and juice concentrated. The large proportion of skins to juice, has a big influence on the wine. To increase the tannin profile, Petr adds some dry vine leaves during fermntation to mash. This technique was used actively in the olden days, vine leaves bring an element of spice, freshness and lot of precision on the palate. It’s bottled with light yeasts without any added sulphites.
