PETR Kočarik is a small grower and wine maker working on 2 ha of land in Čejkovice, which also happens to be one of the largest winemaking villages in Moravia. With a day job, and devoting rest of his time in the vineyards with his family, they work around the clock like all the small producers we work with to produce wines of high quality.
Depending on the year, he produces around 5,000 to 10,000 bottles of wine. In his wines he always try to preserve naturalness and terroir, in each bottle you can find the reflection of the place and the course of weather of the given year. Vineyard work is paramount to this approach. The soil is cultivated without herbicides and pesticides and the vines are treated with natural preparations - algae powder, orange oil. He works according to low-intervention principles in the cellar with the use of skin maceration.
Wines are spontaneously fermented and then lie typically for 12-month on the lees in oak barrels. Wines are not fined or filtered, and SO2 is used only in minimal quantities. Wines are gravitationally transferred into stainless steel at the end where left to rest for at least 6 months. Focus is on Burgundian varieties, especially Pinot Noir which represents about 1/3 of production.
